Lumpiang Sariwa Recipe by Sands Restaurant

Ingredients:
- Baguio Beans 50g
- Carrots 50g
- Jicama 50g
- Sweet Potato 50g
- Garlic 25g
- Onion 10g
- Vegetable oil 5ml
Method:
- Sauté onion until it becomes translucent
- Add sweet potatoes
- When the sweet potatoes are half cooked, add all remaining ingredients
- Season with salt and pepper
Ingredients to make Malunggay Crepe:
- Malunggay 50g
- Flour 200g
- Milk 100ml
- Egg (2 pcs)
Method:
- Boil malunggay leaves until they are dark green in color. Afterwards, put in an ice bath and remove excess water.
- In a blender, add milk, egg and malunggay
- Mix the malunggay mixture in a bowl
- In a non-stick pan, pour a medium ladle of the malunggay crepe mixture
Ingredients to make Lumpia Sauce:
- Soy Sauce 10ml
- Peanut Butter 25g
- Cornstarch 50g
- Brown Sugar 15g
- Water 100ml
Method:
- Boil water and soy sauce
- While coming to a boil, dissolve peanut butter and sugar
- When boiling add the cornstarch
Assembly of Fresh Lumpia:
In a plate, put the lumpia vegetable first then the lettuce on the malunggay crepe. Then roll and drizzle the lumpia sauce. Finish with peanuts and fresh garlic.
